McKellar Ridge's basket press in action

The winemaking is all small batch production designed to provide control of key winemaking processes and to make wines with varietal integrity and very good aging structure. All wines are made from mature vineyards 18-25 years of age. Wines are made in batches of 1 -2 tonnes at a time. Grapes are all netted and hand-picked at optimal ripeness. They are then destemmed and lightly crushed. For whites, the juice is separated from skins immediately, basket pressed and cooled to 15 degrees centigrade. Fermentation is initiated and the wine held cool until fermented dry. Minimal handling is the objective and the exclusion of oxygen by the use of tank lids and CO2 transfers. For reds, following destemming/crushing they cooled to 15 degrees centigrade, held on skins for 2 days and then fermentation initiated. They are hand-plunged 2-3 times each day to faciltate extraction of fruit and tannins. When fermentation is complete a further 8-10 days on skins is used to finalise extraction, before basket pressing and transfer to quality french oak barriques for maturation of 12 months.

The quality of the wines is reflected in the multiple medals and high-scoring reviews from masked tastings by wine judges.

Made in the dry but floral Alsace style, the wine is made from hand-picked fruit, destemmed and basket pressed before transfer to refrigerated SS vats for fermentation at 15 degrees centigrade. The wine is floral and fresh and crisp on the palate - with good citrus intensity and length.

Shiraz Viognier

Made with high quality French oak, this wine is based on the northern Rhone style. It is full of dark cherry and raspberry flavours, complex oak flavours and fine tannins. It has real depth and intensity.

Merlot Cabernet Franc

Made from predominantly Merlot, complimented by 10-15% Cabernet Franc, this wine is plummy, with a fruity middle palate, complimented by the cherry flavours and firmer tannins of the Cabernet Franc. Made in the St Emilion style, this wine has very good aging potential. Three vintages have been made and the 2009 vintage is currently available for sale.

Trio - Cabernet Sauvignon Cabernet Franc Merlot

Made as a true Bordeaux blend with the three major Bordeaux grapes, the dominant variety is Cabernet Sauvignon, providing deep fruit flavours of blackberry and black currant, long dry tannins, complimented by the plum and cherry flavours of the Merlot and Cabernet Franc. This wine has considerable depth and back palate spice and grip.

Seven vintages have been made and they have demonstrated the aging potential of the wine.

Rosé - Shiraz with a touch of Viognier

When vintage conditions allow the early picking of shiraz and viognier, a Rose is made in the light French style, dry but with a fruity middle palate and spicy finish. Delicious for long summer days.
