The Wine Making Process

The winemaking is all small batch production designed to provide control of key winemaking processes and to make wines with varietal integrity and very good aging structure. All wines are made from mature vineyards 18-25 years of age. Wines are made in batches of 1 -2 tonnes at a time. Grapes are all netted and hand-picked at optimal ripeness. They are then destemmed and lightly crushed. For whites, the juice is separated from skins immediately, basket pressed and cooled to 15 degrees centigrade. Fermentation is initiated and the wine held cool until fermented dry. Minimal handling is the objective and the exclusion of oxygen by the use of tank lids and CO2 transfers. For reds, following destemming/crushing they cooled to 15 degrees centigrade, held on skins for 2 days and then fermentation initiated. They are hand-plunged 2-3 times each day to faciltate extraction of fruit and tannins. When fermentation is complete a further 8-10 days on skins is used to finalise extraction, before basket pressing and transfer to quality french oak barriques for maturation of 12 months.

Our Cherie d’Amour

Our famous “sweet heart” wine, Cherie d Amour has wonderfully fruity off-dry finish. The wine is made from the same grapes as our traditional sauvignon blanc, however, fermentation was halted early to create the off -dry style. It has a rich middle palate which partners perfectly with spicy Asian dishes.

Our Rosés

Our Rose is made in the light French style, dry with a fruity middle palate and spicy finish. A blend of merlot and sometimes shiraz grapes creates a crisp, refreshing style of Rosé with an intense plummy middle palate and a light, spicy finish. Deliciously refreshing for long summer days.

Our Pinot Noir Wines

Hand-picked from two small vineyards near Murrumbateman, open-fermented in small batches, hand-plunged, matured in French oak for 9 months. Bright, light crimson, it has very attractive juicy red cherry and strawberry fruit, good balance and good length.

Our 2017 Pinot Noir – Tumbarumba

An elegant and earthy Pinot using exceptional fruit from Mount Tumbarumba vineyard.

Our Sauvignon Blancs

Our Sauvignon Blanc is a traditional Australian style of sauvignon blanc exhibiting fine floral notes, with ripe fruit salad on the middle palate balanced with citrus and tangy flavours to ensure it finishes refreshingly crisp and dry.

Our Rieslings

McKellar Ridge Riesling is made in the dry but floral Alsace style. The fruit is hand-picked, destemmed and basket pressed before transfer to refrigerated stainless steel vats for fermentation at 15 degrees centigrade. The wine has good varietal expression, floral, fresh and crisp on the palate with good citrus intensity and length.

Our Shiraz Viogniers

Made with high quality French oak, this wine is based on the northern Rhone style, with 4% Viognier co-fermented with Shiraz. It is full of dark cherry and raspberry flavours, complex oak flavours and fine tannins. It has real depth and intensity. This is our most awarded wine. Twelve vintages have shown that this wine improves with age, with the first vintage (2005) at its peak now.

Our Shiraz Wines

Hand-picked from a single vineyard, basket-pressed, matured for 9 months in French oak barrels. Deep crimson; a medium to full-bodied shiraz with all the hallmarks of cool-climate shiraz, black cherry, licorice and pepper.

Our Merlo Cabinet Francs

This Saint Emilion blend has a fragrant nose of red berries and hints of vanillin oak. The palate is deep, exhibiting cherry flavours, a deep back palate and a long spicy finish. 80% Merlot, 20% Cabernet Franc. Cellar to 2025.

Our Trio Wines

(Cabernet Sauvignon, Merlot, Cabernet Franc)
Made as a true Bordeaux blend with the three major Bordeaux grapes, Cabernet Sauvignon is dominant providing deep fruit flavours of blackberry and black currant, long dry tannins, complimented by the plum and cherry flavours of the Merlot and Cabernet Franc. This wine has considerable depth and back palate spice and grip. Seven vintages have been made and they have demonstrated the aging potential of the wine.

Our Sparkling Red – Pinot Noir

Exhibits an attractive red berry fruit aroma, and fills the mouth with dark cherry flavours. The mousse is fine and the light tannins provide an attractive crisp and long finish to this sparkling wine which was produced in the Méthode Traditionale. A great celebration wine.
